Provençal Sprouted Bean Salad |

Ingredients:
1 cup truroots sprouted bean trio |
1 small red bell pepper, peeled, seeded and finely diced |
1/2 finely diced red onion (or shallot), chopped |
1/4 cup chopped fresh flat-leaf parsley |
1 teaspoon chopped fresh sage |
2 tablespoons extra virgin olive oil |
2 tablespoons white wine vinegar |
fresh lemon juice, to taste |
sea salt, ground black pepper and sugar, to taste |
Directions:
1. Cook beans according to package directions. Drain well. 2. Combine warm beans, bell pepper, red onion, herbs, oil, vinegar, menon juice and seasonings in a medium bowl. Toss well. Cool to room temperature before serving. |
