Provencal Green Beans and Potatoes Stew |

Very nice healthy recipe, use it as a side for meat eaters or as a main for vegetarians, actually it is totally vegan. Leftovers are even better. Ingredients:
1/4 cup extra virgin olive oil |
1 large sweet onion, diced |
3 garlic cloves, minced |
2 teaspoons fresh rosemary, chopped |
1 (14 ounce) can petite diced tomatoes |
1 lb frozen cut green beans |
2/3 lb golden potato, peeled and diced (1/2 inch) |
1 teaspoon salt |
1/4 teaspoon fresh ground black pepper |
1/2 teaspoon herbes de provence |
Directions:
1. Heat oil over medium-high heat, add onions & salt. Cook until starting to brown (15-18 minutes). 2. Add garlic, herbes de provence, salt and pepper. Cook for 1 minute. Add tomatoes, green beans and potatoes. 3. Cover and bring to a simmer. Simmer gently until veggies are soft, 25-30 minutes. |
