A healthy 'meal in a muffin', good for mornings. Ingredients:
1 1/2 cups all-purpose flour (or spelt) |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 cup brown rice syrup |
2 teaspoons cinnamon |
1/2 teaspoon salt |
3/4 cup wheat bran |
1/4 cup oat bran |
3 tablespoons ground flax seeds |
1 cup soymilk |
1/4 cup olive |
1/4 cup applesauce |
1 teaspoon vanilla |
1 cup cooked quinoa |
1/2 cup chopped almonds |
1/2 cup fresh cranberries |
1/2 cup hemp seeds |
Directions:
1. Mix wet and dry ingredients seperately, then combine. 2. Bake in preheated oven at 400 degrees for about 20 minutes. 3. Cool before eatting. |
