This recipe evolved around my need for a highly nutritious, low calorie, easy meal that I could prepare in bulk and re-heat whenever I need a quick meal i.e. good food fast, not fast food! I bring this with me to school and work too, eventhough I work at a restaurant! I always cook tons of short grain brown rice at a time so I almost always have it on hand for this recipe. Enjoy! Ingredients:
12 cups water |
1 cup quinoa |
1 cup split peas |
1 cup brown lentils |
1 cup red lentil |
2 cups cooked short grain brown rice |
2 red potatoes, diced |
1 onion, diced |
1 cup baby carrots, diced |
2 tablespoons seasoning salt (to taste) |
any fresh i like fresh parsley or dried herbs, that you want to try i like fresh parsley |
Directions:
1. soak quinoa for 30 minutes to eliminate any bitterness while heating water to a boil and chopping veggies. 2. add split peas and brown lintels to water, return to a low boil 3. 20 minutes later add all other ingredients. 4. simmer till everything is tender maybe 30 more minutes, adding more water if necessary. |
