Makes a delicious entree! Ingredients:
4 cod fish fillets, skinless, 6-8 ounces each |
8 slices prosciutto |
4 teaspoons olive oil, divided |
zest from one lemon |
Directions:
1. Heat broiler, with rack set 4 from heat. 2. Season cod with salt, pepper, and a little bit of lemon zest. 3. Wrap 2 slices prosciutto around each fillet; rub with 1 teaspoon oil and place, seam side down, on a broiler-proof baking sheet. 4. Broil until prosciutto is browned and fish is opaque throughout, 8-12 minutes. |
