This is another great recipe from 'Salsa Cooking'. It is a wonderful nibble or appetizer or first course; if using as a first course you should calculate 3 pieces per person. It is served with Simple Mango Salsa Ingredients:
12 large shrimp, cooked and cleaned |
2 tablespoons lime juice |
1/2 honeydew melon, cut in 12 wedges (if you prefer you can use quartered fresh figs instead) |
12 slices prosciutto, small- medium |
1 cup mango salsa, see other recipe (simple mango salsa) |
Directions:
1. Toss the shrimp with the lime juice, and let sit for 5 minutes. 2. Pair each shrimp with a slice of honeydew melon (or fig). Wrap prosciutto around the fruit and the shrimp. 3. Spoon Mango salsa over top and serve. |
