Prosciutto, cheese and pears aren't my creation, by any means....but, I did add my spin on this wonderful combination. This works for a light breakfast, for a brunch buffet, or for a snack or an appetizer for a party. Ingredients:
4 pears, cored and cut into wedges |
8oz spreadable mild white cheese(like laughing cow or boursin or even mascarpone) |
about 6oz thinly sliced prosciutto |
2 lemons |
3t honey |
hot sauce |
extra fine sea or kosher salt |
Directions:
1. Combine lemon juice, honey and several dashes of hot sauce in small bowl. Whisk well to incorporate. 2. Cut each slice of prosciutto down the middle to create about 1/2 inch ribbons. Depending on the size of your original slices, you might get 2 or 3 out of each piece. Each should already be several inches in length. 3. Sprinkle one cut side of each pear piece with just a tiny bit of extra fine salt. 4. Spread on a thin layer of the cheese over the salt. 5. Wrap one prosciutto ribbon around each slice barber pole style. 6. Drizzle with the lemon juice mixture and serve immediately. |
