A great way to use those frozen veggies with sauce included! Super-quick fix on a weeknight. Would work well with frozen broccoli, asparagus...well, you get the picture. Our preferred brand is Allen's Popeye Frozen Spinach w/ Parmesan Cheese Sauce. Just thaw for a couple minutes in the microwave & toss it in. Ingredients:
4 boneless skinless chicken breasts |
2 teaspoons olive oil |
12 ounces frozen chopped spinach, with cream sauce thawed |
1/2 lb angel hair pasta |
1/2 cup cream cheese |
1 1/3 cups milk |
2 garlic cloves, minced |
2 teaspoons onion powder |
1/2 teaspoon basil |
1/2 teaspoon oregano |
salt |
pepper |
crushed red pepper flakes |
parmesan cheese |
Directions:
1. Cook pasta in large pot until al dente. Meanwhile, heat olive oil in skillet. Season chicken breasts with salt, black pepper and onion powder. Saute in skillet, along with minced garlic, until chicken is cooked. Add creamed spinach (along with sauce). Stir, then add cream cheese and stir until melted. When everything is mixed well whisk in the milk. Add salt & pepper to taste, along with basil, oregano, crushed red pepper and a bit more onion powder. Heat to just boiling, then reduce heat to low, cover and simmer 10 minutes or until spinach is tender. Top with grated parmesan cheese, a little more crushed red pepper & a bit of parsley if you like. |
