This super fast dish is for one and you will need to increase for a bigger crowd. However its just a great quick Lunch or light dinner recipe for those on the go. Ingredients:
1-1/4 cups reduced fat tortilla chips |
1/2 cup cottage cheese (i used sour cream) |
3 tbsp. thick 'n chunky salsa |
2 tbsp. shredded lettuce |
1 tbsp. chopped tomato |
1 tbsp. sliced green onion |
2 tbsp. mild cheddar cheese |
Directions:
1. LAYER chips, cottage cheese, salsa, lettuce, tomato and onion on serving plate. 2. Sprinkle with Cheddar cheese. 3. NOTE: this is so quick to make. You can dress it up with other things like olives or Salsa anything that you like. |
