This was a winning recipe in a department store contest in 1980. So rich and delicious. This is a sure winner with coconut lovers, and you will be the winning cook when you make it. :) Ingredients:
3 cups sugar |
3 sticks unsalted butter, room temperature |
6 eggs |
3 cups all-purpose flour |
1/4 teaspoon salt |
1/4 teaspoon baking soda |
1 8 ounce carton sour cream |
1 teaspoon vanilla extract |
1 teaspoon almond extract |
1 6 ounce package frozen coconut |
Directions:
1. In mixer bowl with an electric mixer, cream butter and sugar unfil fluffy 2. Add eggs, one at a time beating well after each addition 3. Mix flour, salt and soda together in a bowl 4. Add to creamed mixture, a little at a time 5. Stir in sour cream 6. Beat well 7. Add flavorings 8. Stir in coconut 9. Pour into a greased and floured 10 inch tube pan 10. Bake for 1-1/2 hours at 325 degrees (adjust to your oven) 11. Cool for 10 minutes in pan 12. Remove from pan to wire rack 13. Delicious, and best if made the day before |
