The Primanti Brothers Sandwich is synonymous with Pittsburgh sports. And, being a life long Steeler fan, I decided to focus this Sunday's game food on them, as well as their opponents, the New Orleans Saints! :) Here's my mini version of the 'Burgh's food icon. Read more . I've never tasted one, but my boyfriend has so, again, thanks to him for the details! :) Ingredients:
1 1lb loaf handmade italian bread, sliced into about 1/2 inch slices(you don't have to make it, but you'll find this in a bakery section, not the wonder bread section) |
1 1/2lb deli pastrami or corned beef |
6oz sandwich sliced provolone cheese |
about 1/2pt cherry(not grape) tomatoes |
about 1/2 bag waffle style french fries(pieces are okay, but you just need the equivalent of 1 fry per sandwich , baked per package directions |
your favorite cole slaw...but not overly sweet. my quick version follows |

for cole slaw |
1 bag preshredded cole slaw mix |
1/2 bottle poppyseed dressing |
about an extra t or 2 of red wine vinegar |
dash of cayenne |
dash of celery powder(crushed seed) |
fresh ground black pepper |
*you will have left over cole slaw |
Directions:
1. Prepare cole slaw by combining all ingredients and let rest in fridge while preparing the rest of the ingredients, then assemble shortly before serving. 2. Slice bread through the middle of the all of the slices. See Photo 3. If needed, slice meat pieces in half so that they create about a 3X1 piece. 4. Cut cheese slices into 4 equal pieces(I used round, and they sat so perfectly on the bread. The nearly OCD portion of my brain LOVED this fact. ;) 5. slice tomatoes into adorable slices. I got 3 out of each tomato, I think See Photo. :) 6. To Stack Sandwiches 7. I suggest using bread pieces on the SAME side of the loaf as each other. In other words, don't use it's mate on the opposite side of the cut, because they may not be as symmetrical, since this should be a hand shaped loaf. 8. Now, lay what will be your bottom pieces down on a large surface, then take it's top and lay it down in front of it's matching piece. 9. Assemble by folding a piece of meat to fit the bread. See Photo 10. Top with a piece of cheese. See Photo 11. Add a piece, or pieces of waffle fry See Photo 12. Top with a drained T full of cole slaw See Photo 13. Top with a couple adorable slices of tomato See Photo 14. spread about 1t mayo on the inside of the upper piece of bread, and add it to the top! 15. You can serve with toothpicks down the middle, if you want, but I didn't bother. They actually held together much better than I anticipated. They aren't difficult to eat, but you still get the threat, and occasional drip of cole slaw dressing....so, a perfect mini version of the original! :) 16. Serve with dill pickles. 17. *these are fine at room temperature! |
