A big dough fan as I am, I couldn’t not make pretzels. They are one of my favorites and they are so great for a snack or on the go. To be honest I thought it would be more challenging to make them, but it was quite simple and I had so much fun rolling them into shape. For sure, one of my favorite day in the kitchen. Ingredients:
30 g yeast |
1 1/2 tablespoons brown sugar |
1 pinch salt |
375 ml warm water |
440 g flour (all-purpose) |
150 g bread flour (i used italian flour because i didn t had bread flour) |
500 ml warm water |
1 1/2 tablespoons baking soda |
30 g melted butter |
2 tablespoons kosher salt |
Directions:
1. In a large Bowl dissolve the yeast, brown sugar and salt in the 375 ml warm water. 2. Add the flour and knead dough on a floured surface until smooth and elastic (at least 5 min). 3. Grease and leave to rise in a bowl, covered for about 1 hour. 4. After the hour passed, mix half a liter of warm water with the baking soda in a pan. 5. Cut dough into 12 pieces (or 24 if you want them a smaller size). 6. Roll each piece into a 30 cm rope as thin as you prefer them. 7. Twist into a pretzel shape, and dip into the soda solution. 8. Place on baking paper on a baking tray and let to rise for 20 minutes. 9. After they are baked, brush with melted butter and sprinkle with kosher salt. 10. Baking:. 11. Pre-heated oven at 230º C in the middle of the oven until golden brown. |
