Nutritious and delicious. Easy gourmet. You don't need dressing, just the natural juices from the pickled beets. Don't be shy with the pepper! *If you have some baby arugula, that would be good to toss in for color and bite. Ingredients:
1/2 green apple, shredded w. a mandolin |
3/4 cup shredded pickled beets from a jar - i used pulaski |
chopped toasted walnuts- about 1/4 cup- to taste |
crumbled blue cheese, i used stilton- about 1/4 cup- to taste |
1/3 cup cooked barley |
raisins- a small handful- to taste |
kosher salt and freshly cracked blk pepper to taste |
Directions:
1. Shred apple over a medium sized bowl. 2. Add the rest of the ingredients, stirring after each to incorporate. 3. Adjust quantities to taste. 4. Enjoy! |
