This is a really simple way to make a quick pesto sauce.
Ingredients:
4 cups fresh basil leaves (if you're not going to use fresh basil, don't bother.)
1/2 cup olive oil
3 garlic cloves
6 sprigs parsley
1/4 cup pine nuts
1/4 cup parmesan cheese, grated
1/4 cup romano cheese, grated
salt and pepper, to taste
Directions:
1. Place all ingredients but the cheese in a blender, and blend until all are chopped fine.
2. Remove from the blender and add the cheeses.
3. Toss with your favorite pasta (and preferrably sprnkle on a little more cheese!), then serve.
