Pressure Cooker Buttermilk Potato Soup |

2 tbs butter |
2 cups diced celery |
1 onion, diced |
1 tbsp minced garlic |
2 cups diced potatoes |
1 1/2 cups diced ham |
3 cups buttermilk |
1 cup chopped broccoli |
1 tsp hot sauce |
1 tsp mustard |
1/4 tsp salt |
1 tbsp ground pepper |
Directions:
1. Melt butter over medium high heat. Add onion, carrot, turnip and garlic; saute until soft - approx 3 min. 2. Add potatoes, ham, water, hot sauce, mustard, salt and pepper. Lock lid and bring to 15psi over high heat. Immediately reduce to low heat and keep pressure for 4 minutes. Remove pan from heat and use natural release to depressurize. 3. Carefully open lid after pressure has dissipated. Stir in buttermilk and corn and simmer until soup reaches desired thickness. |
