Pressing and Blanching Tofu

Needed the how-to for a recipe. Decided to post the help. Had to use two tofu's, because 'Zaar needs at least 2 ingredients! You really only need as much as you need!
Ingredients:
14 ounces tofu

Directions:
1. Pressing:.
2. Place the cakes of tofu between two flat surfaces. Weight down the surfaces using a bowl of water, a heavy can, or whatever you have that will press down firmly but not squash the tofu.
3. Let stand for 30-45 minutes, remove the weight and pour off the liquid.
4. Blanching:.
5. Drop the cakes into boiling water. Reduce heat and simmer for 4-5 minutes. Remove and drain.
