Need preserved lemons for a Moroccan recipe? Here's how to make your own. Ingredients:
12 lemons |
3/4 cup kosher salt |
3/4 cup sugar |
lemon juice, to fill |
Directions:
1. Wash lemons under warm water. Make a series of lengthwise slices in each lemon, without cutting it through, 8-10 slices in each lemon. 2. One at a time, layer each lemon with one tablespoon each of salt and sugar in a large jar. Add enough lemon juice to fill the jar. Cap tightly and refrigerate at least 30 days, turning and shaking every few days. |
