Excellent! Serve with a hearty bread and you have a wonderful and healthy meal. Very quick if you use a food processor or chopper for dicing the vegetables. Ingredients:
1 cup lentils, rinsed |
4 cups water |
1/2 cup onion, finely chopped |
1/2 cup celery, finely chopped |
1/2 cup carrot, finely chopped |
2 large garlic cloves, finely chopped |
1 bay leaf |
salt and pepper |
1/2 teaspoon dried thyme or 1 teaspoon fresh thyme |
1 lemon, sliced (optional) |
Directions:
1. Place rinsed lentils in a Dutch oven. 2. Add all ingredients, except lemon. 3. Bring to a boil, turn down to a simmer, cover and cook for about 1 hour or until vegetables are tender. 4. Remove bay leaf, ladle into bowls and serve garnished with lemon slices. |
