One of my administrators cooked this for a meeting and I loved it. The beef was omitted for a completely vegan soup. However, I'm sure it would be delicious with the beef as well-or maybe turkey. She said the soup was given to her while she was pregnant. This is souper (he he) easy to make. It also makes a lot of soup, but it freezes well. Ingredients:
1 lb ground beef |
1 onion |
3 potatoes |
3 carrots |
3 celery ribs |
3 garlic cloves |
1 cup cooked rice |
14 1/2 ounces stewed tomatoes |
14 1/2 ounces corn |
14 1/2 ounces peas |
14 1/2 ounces green beans |
1 bay leaf |
1/2 teaspoon thyme |
1/2 teaspoon basil |
3 teaspoons salt |
1/2 teaspoon black pepper |
8 cups water |
Directions:
1. Brown ground beef and onion in frying pan. 2. Add all ingredients, including ground beef & onions, to a large pot. 3. Bring to a boil. 4. Reduce heat to medium. 5. Let cook until vegetables are cooked through. |
