Prawn Stir-Fry with Lemon and Ginger |

A light, quick-cook healthy meal Ingredients:
4 oz prawns, defrosted if frozen |
3 oz broccoli, cut into small florets |
2 oz green beans, trimmed and cut into 1 pieces |
1/2 onion, peeled, cut into quarters and the layers separated |
1/2 oz (root) ginger, peeled and thinly sliced |
3 scallions, trimmed and chopped |
1 clove garlic, peeled and thinly sliced |
1 teaspoon oil |
1 teaspoon (light) soy sauce |
1 tablespoon lemon juice |
1 1/2 oz basmati rice |
Directions:
1. Cook the rice according to the packet instructions 2. Place the broccoli florets and green beans in a heat-proof bowl, pour over some boiling water, cover and allow to stand for 3 minutes. Drain and rinse with cold water. Set aside. 3. Heat the oil in a non-stick frying pan or wok and add the ginger, garlic, spring onions and onion. Stir fry for a few seconds 4. Add the blanched vegetables and stir fry for 3 or 4 minutes until tender. 5. Add the light soy sauce, lemon juice and prawns, turn down the heat and allow to cook through for 1 or 2 minutes 6. Serve over cooked rice. |
