Prawn Shrimp Noodle Salad

This easy Summertime Salad is perfect for a small group for lunch or dinner, as a main or side dish! Great with Rose or White Wines!
Ingredients:
1 lb prawns, cooked, peeled & deveined (or frozen / thawed already cleaned)
5 oz noodles, cooked, drained and cooled - i prefer hokkien
8 oz rocket lettuce - or other type as desired
8 oz bean sprouts
1 cup snow pea sprouts
1/2 cup alfalfa sprouts
1 cup radishes, thinly sliced
8 spring onions, thinly sliced
dressing
1/2 cup olive oil - extra virgin
2 tblsp soy sauce - light
juice of 1 lime - with zest
2 tsp chili, chopped
1 clove garlic, crushed
1 tsp ginger, grated
Directions:
1. Combine rocket, sprouts, alfalfa, radishes and onions. Toss well.
2. Toss through prawns and noodles until well combined.
3. To prepare Dressing: Place oil, soy, juice, chili, garlic and ginger in a screw-top jar. Shake well until blended.
4. Pour over salad just before serving. Toss again. Serve immediately.
