Prawn Shrimp Noodle Salad |

This easy Summertime Salad is perfect for a small group for lunch or dinner, as a main or side dish! Great with Rose or White Wines! Ingredients:
1 lb prawns, cooked, peeled & deveined (or frozen / thawed already cleaned) |
5 oz noodles, cooked, drained and cooled - i prefer hokkien |
8 oz rocket lettuce - or other type as desired |
8 oz bean sprouts |
1 cup snow pea sprouts |
1/2 cup alfalfa sprouts |
1 cup radishes, thinly sliced |
8 spring onions, thinly sliced |
dressing |
1/2 cup olive oil - extra virgin |
2 tblsp soy sauce - light |
juice of 1 lime - with zest |
2 tsp chili, chopped |
1 clove garlic, crushed |
1 tsp ginger, grated |
Directions:
1. Combine rocket, sprouts, alfalfa, radishes and onions. Toss well. 2. Toss through prawns and noodles until well combined. 3. To prepare Dressing: Place oil, soy, juice, chili, garlic and ginger in a screw-top jar. Shake well until blended. 4. Pour over salad just before serving. Toss again. Serve immediately. 5.
