Try this main meal twist on a seventies classic. Ingredients:
7 ounces cooked large shrimp |
1 avocado, halved, peeled and sliced |
7 ounces cherry tomatoes, halved |
4 scallions, finely sliced |
1 romaine lettuce, shredded |
2 tablespoons olive oil |
1/2 lemon, juice |
3 tablespoons mayonnaise |
2 tablespoons ketchup |
1/2 lemon, juice |
Directions:
1. Ready in 10 minutes Whisk the ingredients for the dressing together. If it's a little thick, add a splash of water. 2. Put the shrimp, avocado, tomatoes, scallions and lettuce in a large salad bowl, drizzle with the olive oil and lemon juice, toss gently, then serve with the dressing handed round separately. |
