Prawn and Vegetable Pasta |

pasta Ingredients:
228 g uncooked whole wheat pasta |
1 cup courgette, chopped |
1 cup tomatoes |
1 cup carrots, chopped |
1 cup english peas |
2 tsp. extra-virgin olive oil |
1 whole lemon (zest and juice) |
400 g shrimp, cleaned, deveined, preferably sustainable |
1/2 tsp. crushed red peppers |
1/4 cup chopped fresh basil |
Directions:
1. Preheat oven to 400° 2. Cook pasta according to package directions. Drain pasta in a colander. 3. Gently toss all ingredients except basil with a pinch of salt and pepper. Place on sheet pan and roast in oven until cooked through, about 10 minutes. 4. Toss cooked shrimp and vegetables with the fresh basil and pasta |
