1 &1/2 lbs small new potatos,scrubbed |
15g/1/2 oz/1/2 cup fresh coriander (cilantro) |
350g/12 oz jar tomato and chilli sauce |
300g/110 oz cooked peeled prawns(shrimp),thawed and drained if frozen |
6 tbs water |
1 small can bamboo shoots |
Directions:
1. 1.Cook the potatos in lightly salted,boiling water 2. for 15 minutes,until tender.Drain and return to the pan. 3. 2.Finely chop half the coriander and add the pan with 4. the tomato and chilli sauce and 90ml/6 tbsb water.Bring to the boil, 5. reduce the heat,cover and simmer gently for 5 minutes. 6. 3.Stir in the prawns and heat briefly until they are warmed 7. through.Do not overheat the prawns or they will quickly shrivel, 8. becoming tough and tasteless.ADD the bamboo shoots. 9. spoon into shallow bowls and serve sprinkled with remaining coriander,torn into pieces |
