Prawn And Cashew Nut Spicy Salad |

Great on the side of a chilli burger on a hot summer evening ! (just like the ones we don't get in England !) Ingredients:
for dressing |
50g sugar |
50ml fish sauce (nam pla) |
50ml lime juice |
1-2 small chillis, deseeded, finely sliced |
2 cloves garlic, finly chopped or grated |
2 tsp finely grated fresh ginger |
for salad |
125g thick rice noodles, softened in hot water and drainded |
300g prawns |
300g cucumber, seeds removed and chopped in 1/2 inch chunks |
150g radishes, sliced thinly |
100g unsalted cashew nuts |
2 tbs choped fresh corriander |
Directions:
1. Place all the ingredients for the dressing in a bowl and mix well 2. place the drained noodles into a large clean bowl and add the dressing, toss to coat. 3. Add the prawns, the cucumber and the radishes and toss again 4. sprinkle the cahsew nuts and corriander over the top and serve. 5. Can be kept cooled but leaved the cashews and corriander off the top until serving. |
