Praline Yam Casserole With Orange Sauce |

On one of my many cookbook /recipe searches , I found a cookbook called Americana Cookery. I liked the name , but I loved some of the recipes in it even more. Thought I might place some of them here for safe keeping and to share Ingredients:
4 medium yams |
2 eggs |
1/4 cup dark brown sugar, firmly packed |
2 tablespoons butter, melted |
1 teaspoon salt |
20 pecan halves |
1/3 cup sugar |
1 tablespoon cornstarch |
1/8 teaspoon salt |
1/8 teaspoon orange peel, grated |
1/4 cup dark brown sugar, firmly packed |
1 cup orange juice |
1 tablespoon lemon juice |
2 tablespoons butter |
3/8 teaspoon angostura bitters |
Directions:
1. Cook yams until tender. 2. Peel and quarter yams and mash in a large bowl. 3. Beat in butter, brown sugar,salt and eggs. 4. Turn into a 1-qt casserole dish 5. Arrange pecan halves in a pattern on top of casserole. 6. Sprinkle top with 1/4 cuo dark brown sugar. 7. Drizzle top with 1/4 C melted butter. 8. Bake at 375* for 20 minute. 9. ********************************. 10. Combine sugar, cornstarch, salt, orange peel, orange juice , and lemon juice in a sauce pan. 11. Bring to a boil over medium heat. 12. Cook until thickened, stirring constantly. 13. Remove from heat. 14. Stir in butter and bitters. 15. Serve warm orange sauce over casserole. |
