Praline Topped Sweet Potatoes |

This recipe is from the Cajun Cuisine cookbook and always requested for Thanksgiving. I usually make these early in the day and reheat before dinner. Ingredients:
8 sweet potatoes |
2 cups pecans, chopped |
1 cup brown sugar |
3/4 cup oleo (or butter) |
1 pinch salt |
1 teaspoon vanilla |
Directions:
1. Bake sweet potatoes at 350 for about 1 hour, peel, slice and place in a buttered 9X13 inch baking dish. 2. Mix together pecans, brown sugar, oleo, salt and vanilla in a saucepan; bring to a boil and cook for about 2-3 minutes. 3. Pour over potatoes and bake at 350 for about 10 minutes. |
