Praline Topped Sweet Potatoes

This recipe is from the Cajun Cuisine cookbook and always requested for Thanksgiving. I usually make these early in the day and reheat before dinner.
Ingredients:
8 sweet potatoes
2 cups pecans, chopped
1 cup brown sugar
3/4 cup oleo (or butter)
1 pinch salt
1 teaspoon vanilla
Directions:
1. Bake sweet potatoes at 350 for about 1 hour, peel, slice and place in a buttered 9X13 inch baking dish.
2. Mix together pecans, brown sugar, oleo, salt and vanilla in a saucepan; bring to a boil and cook for about 2-3 minutes.
3. Pour over potatoes and bake at 350 for about 10 minutes.
