Awesome awesome awesome. So good. I keep these on hand all year long. They are good crumbled in oatmeal, good as a snack, good crumbled over ice cream. Enjoy Ingredients:

3-1/2 cups toasted pecan halves |
1/4 cup light corn syrup |
1/4 cup light brown sugar |
2 tablespoons butter |
1 teaspoon vanilla |
1/4 teaspoon baking soda |
1-1/2 cups dried cranberries |
Directions:
1. Preheat oven to 250. 2. Grease a rectangular pan. 3. Spread pecans in a single layer in pecan. 4. Combine corn syrup, sugar and butter in a glass measuring cup then microwave on high for 1 minute. 5. Stir then microwave 1 minute longer. 6. Stir in vanilla and baking soda until blended. 7. Drizzle evenly over pecans and stir with a wooden spoon until evenly coated then bake 1 hour stirring every 20 minutes. 8. Transfer mixture to a large sheet that has been covered with heavy duty aluminum foil spreading pecans evenly with lightly greased spoon. 9. Cool completely. 10. Break pecans apart with a wooden spoon. 11. Combine pecans and cranberries in a bowl. Store in air tight container at room temperature for up to 2 weeks. |
