PRALINE COOKIES WITH BROWN SUGAR FROSTING Purchased from the Long Estate in Forney, Texas in 1988. These are very good and a regular on my cookie trays at Christmas. They go fast. Ingredients:
1/2 cup unsalted butter |
1/2 cup shortening |
1 cup packed brown sugar |
1/2 teaspoon baking powder |
1/4 teaspoon baking soda |
1/4 teaspoon salt |
1 egg |
2 tablespoons milk |
1 teaspoon vanilla |
3 cups flour |
1 cup finely chopped pecans |
brown sugar frosting |
1 cup packed brown sugar |
1/4 cup unsalted butter |
1/4 cup cream |
1-1/3 cups powdered sugar |
Directions:
1. Preheat oven to 375. 2. Beat butter and shortening in a large bowl with an electric mixer. 3. Add brown sugar, baking soda, baking powder and salt and mix well. 4. Add egg, milk and vanilla then beat until well mixed. 5. Add in flour and 1/2 cup chopped pecans then mix well with a wooden spoon. 6. Shape dough into 2 rolls then wrap in waxed paper and chill 4 hours. 7. Cut dough into 1/4 slices then place on ungreased cookie sheet and bake 8 minutes. 8. Prepare frosting by heating together butter, sugar and cream in a small saucepan. 9. Remove from heat and add powdered sugar then beat with a whisk until smooth. 10. Spread over cookies as desired. |
