Quick and easy baked rice dish. Cooked in a covered casserole dish. Very flavorful. Wonderful served with chicken, beef, and pork. Perfect for buffets and holiday meals. Ingredients:
1 stick unsalted butter |
1 cup long grain rice |
1 can beef consomme |
1/2 cup pictsweet seasoning blend (frozen food section) or 1/2 cup chopped onions |
1 can water |
black pepper |
note: may add sliced mushrooms, water chestnuts, pimiento |
for mexican rice |
add a little cumin, chili powder, garlic, 1/4 cup drained petite diced tomatoes, cilantro, black olives |
also: i have doubled it many times |
Directions:
1. Melt butter in casserole dish 2. Add all ingredients 3. Stir to blend 4. Cover dish 5. Bake at 350 degrees until liquid is absorbed 6. Remove from oven, keeping lid on for a few minutes |
