Lower in carbs and higher in protein, this is a super easy and very yummy dish. You could probably throw some veggies right into the slow cooker for an easy one-dish meal. I found this on Spark People. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
3 lbs boneless skinless chicken (nutritional info uses breast meat, altho i use thighs personally.) |
1/4 cup italian dressing (i used wish-bone robusto.) |
quick spritz cooking oil (i use one healthy spray of mazola pure cooking spray, olive oil.) |
1 small onion, chopped |
1 clove garlic, chopped |
10 ounces cream of chicken soup (1 can, i used campbell's healthy request.) |
8 ounces neufchatel cheese (i used philly.) |
1/2 cup reduced sodium chicken broth |
Directions:
1. Place chicken in the slow cooker and coat with dressing. Cook on low for 4 to 6 hours. 2. LATER ON - In a medium saucepan, saute onions and garlic in cooking spray for a minute or two. Add cream of chicken soup, chicken broth, and Neufchatel. Stir until consistent. 3. Add the pan mixture to the slow cooker, and let the slow cooker have at it for one more hour. 4. To get serving size, I assumed a 3oz portion of chicken. (Divided 3 pounds of chicken by 3oz to get 16 servings.) This should make approx 16 ladylike half portions. |
