This comforting wholesome soup is the best accompaniment to a cold winter's day. Before I had to go gluten-free I favored serving this soup with a crusty whole grain bread spread with apple butter. Ingredients:
1 - 1lb pkg jimmy dean brand hot pork sausage |
1 - 32 oz. (1qt) chicken broth plus equal ammount water |
2 garlic cloves, minced |
6 med to large yukon gold or red potatoes, peeled & chunky diced |
1 med white onion, diced large |
1 - 10oz. pkg frozen spinach leaves, thawed & drained or 2 c. fresh spinach leaves, rinsed & stems removed |
Directions:
1. In skillet, crumble and brown sausage over med-high heat; set aside. 2. In stock pot, combine chicken broth and water. Bring to a boil over high heat. Add potatoes, onion and garlic. Boil for 5 min. 3. Reduce heat to medium. Add sausage and simmer for 20 min. or until potatoes are tender. 4. Add spinach and stir thoroughly right before taking soup off burner. 5. note - you can make it less spicy by using regular sausage or spicier by adding red pepper flakes to liven things up - ENJOY! |
