Don't know where I got this, but even my 2 boys would eat it when they were growing up. SOOOO simple, but great tasting! Prep time includes 1 hour marinating time. Ingredients:
1 chicken, cut up or 4 large boneless chicken breasts |
1 cup white wine |
1 tablespoon dried tarragon |
1/4 cup butter |
salt & pepper, to taste |
1 cup mushroom, sliced (optional) |
1/2 cup white wine |
1 tablespoon flour |
Directions:
1. Mix 1 cup wine and 1 T. tarragon, marinate chicken for 1 hour. 2. Melt butter in frypan, brown chicken on all sides. Add salt & pepper and mushrooms, if desired. 3. Add marinade, cover, cook 1/2 hour. 4. Remove chicken to dish, bring drippings to boil. 5. Mix 1/2 cup wine and flour, add to drippings, whisk until thick and bubbly. 6. Pour sauce over chicken. 7. Good with rice (for gravy!). |
