This pancake recipe takes a little of the guilt away from a normally carbohydrate-laden breakfast! And cleanup is so easy.I pour the batter directly from the blender. A friend made this for a birthday brunch-I think she got the recipe from . Ingredients:
3 eggs |
1/2 cup cottage cheese |
1/4 cup flour |
2 tablespoons milk |
2 tablespoons oil |
1/4 teaspoon vanilla |
1 dash salt |
Directions:
1. Combine all ingredients in blender. 2. Run on high speed 1 minute to remove lumps. 3. Pour onto greased skillet over medium heat, turning when bubbles form on top and outsides begin to dry. 4. (Color should be light golden brown for best texture. Darker pancakes taste noticeably more eggy. ). 5. Serve warm with fruit, powdered sugar, butter and syrup, or PB&J! |
