This not-too-sweet parfait is a colorful way to start the day. Vary the dried fruit in the granola according to what you have on hand-try chopped dried apricots, raisins, dried currants, dried blueberries, or even chopped dried mango.
Ingredients:
1 cup halved strawberries
1 cup blueberries
1 cup raspberries
3 cups plain low-fat yogurt
3 cups power granola
2 tablespoons maple syrup
Directions:
1. Place first 3 ingredients in a medium bowl; toss gently to combine. Spoon 1/2 cup berry mixture into each of 6 (8-ounce) parfait glasses; top each serving with 1/2 cup yogurt and 1/2 cup Power Granola. Drizzle each serving with 1 teaspoon maple syrup.
