This cake is absolutely wonderful for special occasions such as weddings, anniversaries, births, welcome home etc. Everyone loves it!
Ingredients:
1 cup butter
1/2 cup shortening
3 cups white sugar
5 eggs
1-1/2 tablespoons vanilla extract
1 teaspoon lemon extract
1-1/4 cups 2% or homogonized milk
note: you can also use buttermilk in this recipe and it gives the cake a lovely moistness.
3 cups all-purpose flour, sifted
note: to turn all-purpose flour into cake flour add 1 tablespoon of corn starch for each cup of flour used. this is not necessary but it does enhance the cake texture.
1 teaspoon baking powder
1/4 teaspoon salt
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Grease and flour a 10 inch Bundt or tube pan.
3. Sift together the flour, baking powder and salt.
4. Set aside.
5. In a large bowl, cream together the butter, shortening and sugar for 25 minutes or until light and fluffy. This is the secert to a great cake base.
6. Beat in the eggs one at a time, beating for approx. 30 seconds for each egg.
7. Stir in the vanilla.
8. Beat in the flour mixture alternately with the milk.
9. Pour batter into prepared pan.
10. Bake in the preheated oven for 80 to 90 minutes, or until a toothpick inserted into the center of the cake comes out clean.
11. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

13. Note:
14. You can follow the original directions or make the adjustments mentioned. Always start and end with the dry ingredients. Do not over beat when you start adding the dry ingredients or the cake will be tough. Depending on your oven this cake can also be baked at 325 degrees for 70-80 mins, but begin checking after 60 mins.
15. The last 20 mins you must tent the cake with foil shinny side up and away from the cake.
