From Mom's recipe file. Use lemon juice OR cocoa, not both. Ingredients:
3/4 lb butter |
3 cups sugar |
6 eggs |
3 1/2 cups all-purpose flour |
3/4 teaspoon baking powder |
1 pinch salt |
3/4 cup milk |
1 teaspoon vanilla |
1 teaspoon lemon juice (optional) |
3 tablespoons dutch-processed cocoa powder (optional) |
Directions:
1. In work bowl of stand mixer, cream butter and sugar until there is no granularity left and butter is light and fluffy. Add eggs, one at a time, beating well after each addition. 2. Sift flour, baking powder and salt 3 times. Alternate adding flour and milk to butter, starting and ending with dry ingredients. Add vanilla and lemon juice, if using. Pour into a greased and floured loaf pan. 3. To make marble cake, pour 2/3 of the batter into a greased and floured loaf pan. Add cocoa powder to the remaining batter and mix until fully blended. Pour over batter in loaf pan and swirl briefly with a butter knife. 4. Put into a cold oven and turn temperature up to 350°F Bake 1 hr 15 minute Cool in pan 10 minutes, then remove and leave on a cooling rack until fully cooled. |
