Bread from a Potsdam baking seminar from Germany. This recipe uses fresh cake yeast and makes several loaves or one huge one Ingredients:
2 cakes fresh yeast |
1 tbs sugar |
1/2 tsp z salt |
1 kg flour |
750 ml lukewarm water |
variations: olives, sun dried tomatoes, rosemary |
or: dried cranberries and more sugar in the recipe to make it sweeter |
Directions:
1. In a large bowl, combine sugar and salt along with the crumbled yeast and warm water. 2. Mix in flour and let stand 30 minutes in a warm place. 3. It will rise very puffy in the bowl 4. Stir the dough down and then form dough either as round loaves or one large rectangle on a baking sheet. 5. Let rise another 30 minutes. 6. Then bake 230C for 30 to 40 minutes 7. To make variations: Just before baking, stir in the desired additions. |
