Potatoes With Olives And Twenty Cloves Of Garlic |

These are incredible. A very nice potato dish loaded with olives and garlic. These are very popular when I serve this dish. I have been making this recipe for over 20 years and it never gets old. Enjoy Ingredients:
1 tablespoon olive oil or canola oil |
1 large onion peeled and coarsely chopped |
20 small garlic cloves peeled whole |
1 cup vegetable stock |
10 small new potatoes cut into 1 chunks |
1/2 teaspoon dried rosemary leaves |
1/4 cup coarsely chopped olives |
1/4 teaspoon sea salt |
Directions:
1. In a heavy 3 quart saucepan heat oil and sauté onions and garlic for 2 minutes. 2. Add stock and bring to a boil then add potatoes, rosemary, olives and salt. 3. Bring to boil then reduce heat and simmer covered for 12 minutes. 4. Lift out solid ingredients with a slotted spoon and serve on a plate. |
