Potatoes with Garlic Parsley Mayonnaise |

A nice change from your usual potatoe salad. Ingredients:
6 large red potatoes, peeled and cubed |
1/2 cup mayonnaise |
1 1/2 teaspoons minced garlic |
1 teaspoon lemon juice |
1 teaspoon olive oil |
1/8 teaspoon salt |
1/8 teaspoon black pepper |
1/8 teaspoon white pepper |
1/16 ground cayenne pepper |
1/2 cup chopped italian parsley (1/4 cup if you like less) |
Directions:
1. Boil potatoes in water until fork tender, about 15 minutes. 2. Drain and let cool (do not refrigerate). 3. Combine all remaining ingredients and gently fold into potatoes. 4. Serve at room temperature. |
