This dish has a fresh taste to it. I love it for breakfast! Ingredients:
3 -4 tablespoons olive oil |
6 -8 large russet potatoes |
1 -2 garlic clove |
2 medium firm tomatoes |
8 ounces feta cheese |
1/2 bunch cilantro |
Directions:
1. Chop potatoes with the peel on and fry in a skillet over med. high heat. 2. Add chopped garlic. 3. When the potatoes are done to your preference, add chopped tomatoes, cilantro, and cheese. 4. I love this one with for breakfast with eggs. |
