Good, hearty, warming comfort food. Easy and quick.... it's better the next day as a lunch snack. Ingredients:
6 (to 8) potatoes, peeled (yukon's are nice in this) |
2 cups shredded cheddar (or anyone you like... i play around with this) |
8 oz sour cream |
1 medium onion - chopped ('1/4 cup) |
salt and pepper to taste |
paprika |
Directions:
1. Peel and boil the potatoes until they're easy to poke with a fork. 2. Dice the cooked potatoes. 3. Preheat the oven to 350 F. 4. Mix all the ingredients in a casserole dish. Sprinkle the top with paprika. 5. Bake in 350 F oven 35 minutes or until golden brown and bubbly. 6. Serve with your favorite chops, steaks, ....whatever... 7. Really good with some Frank's extra hot sauce.... yum. |
