Potatoes Sauteed With Lemon and Parsley

Ingredients:
1 lb russet potato, thinly sliced
2 1/2 tablespoons olive oil
1 tablespoon chopped parsley
1 tablespoon lemon juice
1/2 teaspoon lemon zest
1/4 teaspoon salt
1/8 teaspoon pepper
Directions:
1. Cook potatoes in a large saucepan of boiling salted water until barely tender, 6-8 minutes. Drain.
2. In a large skillet, heat oil over medium-high heat. Add potatoes and cook until soft and lightly browned, 7-8 minutes.
3. Stir in parsley, lemon juice, zest and season with salt and pepper.
