This is a type of potato casserole. You microwave it, so it's quick. I got a variation of this from my aunt a very long time ago and changed a couple of things to make it better for my family. If you don't have the bacon (or time to use it) skip it. It'll still be good. Ingredients:
4 slices bacon, crumbled |
4 medium potatoes, sliced thin |
1/4 cup onion, chopped |
1/4 cup water |
1/3 cup mayonnaise |
1/2 cup sour cream |
1 cup shredded cheddar cheese |
1/2 teaspoon salt |
1 dash pepper |
Directions:
1. Slice potatoes into 1 1/2 quart dish. Add onions and water. Cover with a lid and microwave on high for 12-14 minutes, stirring halfway through cooking time. 2. Except bacon, combine remaining ingredients. Add to potatoes and mix lightly. 3. Sprinkle bacon on top and microwave on high for 1 1/2 to 2 minutes to heat thoroughly. |
