Comfort food from the heartland and a great way to use up a little dab of leftover ham. From an old newspaper clipping. Ingredients:
2 tablespoons vegetable oil |
2 tablespoons butter |
1/2 cup onion, peeled and chopped |
1/2 cup ham, diced |
1 (24 ounce) package frozen hash browns, thawed and drained |
1/2 teaspoon salt (or to taste) |
1/2 teaspoon pepper |
Directions:
1. Heat oil and butter in a large skillet; add onion and ham. 2. Saute two minutes; put potatoes on top of mixture, making a large pancake. 3. Season and cover. 4. Cook slowly until golden on bottom. 5. To turn, slide pancake onto a large plate. 6. Add more oil and butter to skillet if needed. 7. Invert pancake into skillet and cook until golden, about 15 minutes. 8. To serve, cut into pie-shaped wedges. |
