A creamy potato dish for garlic lovers. My mom's recipe. Ingredients:
4 large peeled potatoes, water to cover |
1/4 teaspoon salt |
1 1/2 cups large curd cottage cheese |
1/2 cup sour cream |
2 garlic cloves, minced |
1 cup shredded sharp cheddar cheese or 1 cup swiss cheese |
4 tablespoons chopped fresh parsley |
2 green onions, minced |
Directions:
1. Cook potatoes in water with salt till done. 2. Cut potatoes into 1/2 inch dices. 3. Toss potatoes with cottage cheese, sour cream, garlic, salt, and green onions. 4. Turn into a buttered 1 1/2 quart casserole. 5. Sprinkle with the cheese, bake 350 for 35 minutes or until potatoes are heated through and cheese is melted. 6. Sprinkle with reaming parsley, serve. |
