Potatoes Paprikas Casserole |

This Hungarian Casserole is good for a week-night meal or an entree for a winter lunch. Just ask your butcher for Hungarian sausage. Ingredients:
2 lbs. boiling potatoes |
3 tbsp. olive oil |
2/3 cup finely chopped onion |
1/2 tsp. finely chopped garlic |
1 tbsp. sweet hungarian paprika |
2 cups chicken or beef stock |
1/8 tsp. caraway seeds |
1 medium tomato, peeled, seeded and chopped (about 1/4 cup) |
1 large green pepper, seeded and deribbed, finely chopped |
1 tsp. salt |
freshly ground black pepper |
1 lb. hungarian sausage (debreceni or other semi-soft smoked sausage) |
1/2 cup sour cream |
Directions:
1. Cook the potatoes until almost done (8 to 10 minutes). Peel and cut into 1/4 inch slices. Cook the onions and garlic in olive oil until lightly colored (8 to 10 minutes) 2. Slice the sausage about 1/8 inch thick. 3. Off the heat, stir in paprika. Stir until onions are well coated. 4. Return the pan to the heat, add stock, bring to a boil, and add caraway seeds, potatoes,sausage, tomato, green pepper, salt and a few grindings of pepper. Bring the liquid to a boil, stir, cover and simmer for 25 to 30 minutes until the potatoes are tender. 5. Top each serving with some sour cream |
