I got this recipe from my Grandma. It's a great comfort food, good with applesauce or syrup. Ingredients:
3 cups potatoes, peeled and shredded |
1/2 cup onion, finely shredded |
1/8 cup flour |
3 eggs, beaten |
1 teaspoon salt |
1/8 teaspoon pepper |
oil |
Directions:
1. Dry potatoes with paper towels. 2. Combine all ingredients except for oil. 3. Warm oil (enough to cover bottom) in a large skillet. 4. Pour 1/4 cup of mixture for each pancake into oil, flatten slightly with spatula. 5. Cook until golden brown on both sides. |
