Potatoes, Old French Style |

This is an old standard in our house. The nutmeg and lemon give the potatoes a special flavor. Ingredients:
2 lbs red potatoes |
1 medium onion, chopped |
1 garlic clove, minced |
2 tablespoons flour |
1/4 cup olive oil, plus |
1 tablespoon olive oil |
2 tablespoons chopped parsley |
1/4 teaspoon ground nutmeg |
1 lemon, juice and zest of, grated |
salt and pepper, to taste |
Directions:
1. Preheat oven to 450 degrees. 2. Wash and cut potatoes in quarters. Leave skins on. 3. Parboil the potatoes in boiling water for 3 to 5 minutes. Drain. 4. Mix flour, 1/4 cup oil, and remaining ingredients in a large bowl. Add potatoes and toss to coat. 5. Place in a buttered baking dish and drizzle a little more oil on the top. 6. Bake 20 to 25 minutes, or until nicely browned and tender, stirring halfway through cooking time. |
