Potatoes N' Bacon BBQ or Oven |

Every time we host a BBQ I have to make this! It is a nice change from the usual potato salad, it is served warm! Ingredients:
6 medium potatoes, unpeeled |
10 slices bacon, crisply cooked and crumbled |
4 green onions, chopped |
3 celery ribs, diced |
1/4 cup white vinegar |
2 teaspoons sugar |
1 teaspoon salt |
1 teaspoon ground mustard |
1/4 teaspoon ground pepper |
1/4-1/2 teaspoon tabasco sauce, i use cholula |
Directions:
1. Cut potatoes into big cubes. 2. Place in a covered pot with water covering about 1-2 inches over the potatoes. 3. Bring to a boil. 4. Turn heat down to a simmer. 5. Simmer until just tender, not TOO soft 6. Preheat grill to medium heat. 7. Mix potatoes, bacon, celery and onions in a large bowl. 8. Blend remaining ingredients in a small bowl. 9. Pour over potato mixture and gently combine. 10. Put in a disposable aluminum roasting pan and cover with foil. 11. Set it on the BBQ for about 20 minutes, stir occasionally. 12. Enjoy! 13. *If using oven, follow directions except heat oven to 350 degrees*. |
